Total- 257 calories for both, 1 turkey burger + 1 cup of cauliflower mash.
Cauliflower mash is a fantastic low carb substitute for mashed potatoes!
3/4 cup grated zucchini
1 1/4 pound 93% lean ground turkey
1/3 cup chopped red onion
2 garlic cloves (sub minced garlic, easier)
1/4 cup whole wheat breadcrumbs
1/4 cup chopped fresh parsley
1 tablespoon chopped fresh mint
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground allspice
1/4 teaspoon chili powder
1/4 teaspoon kosher salt
fresh ground black pepper
Squeeze any excess liquid out of zucchini, once chopped. Best done with blotting w/paper towel. Mix zucchini in large bowl w/ground turkey, onion, garlic, bread crumbs, parsley, mint, cumin, coriander, allspice, chili powder, salt/pepper to taste. Form into 5 one inch patties.
Heat large skillet over med-high heat. Lightly spray pan w/oil. Put burgers on pan and reduce heat to med-low. Cook about 4 mins on each side, until browned.
Cheesy Cauliflower “Mash”
1 large cauliflower head, chopped into florets
4 garlic cloves
1/3 cup 1% buttermilk
1 tablespoon unsalted whipped butter
3/4 tablespoon kosher salt
fresh cracked black pepper
1 tablespoon finely chopped fresh chives
1/3 cup shredded reduced fat cheddar cheese
Bring large pot of water to a boil. Add cauliflower & garlic & cook 15-20 mins or until soft. Drain. Add buttermilk, butter, salt, & black pepper to taste. Blend or mash to puree the cauliflower. Top with chives and cheddar cheese.
