Skinny Chicken Parmesan- 174 calories/serving

Ingredients:
cooking spray
3 boneless skinless chicken breasts (8 oz each)
3/4 teaspoon kosher salt
1/2 cup seasoned whole wheat breadcrumbs
3 Tablespoons grated parmesan cheese
2 Teaspoons melted salted butter
1 Tablespoon olive oil
2 cups Marinara sauce
9 Tablespoons part-skim mozzarella cheese

Preheat oven to 450 degrees. Lightly spray a cookie sheet with oil or put aluminum foil in sheet.
Slice chicken breasts in half. Season with salt & pepper
In small bowl, combine breadcrumbs & Parmesan. In another small bowl, combine butter and olive oil. Brush butter/olive oil mix on both sides of chicken. Dip both sides of chicken in bread crumb mixure and place chicken on baking sheet.
Bake about 20 minutes. Turn chicken and cook other side for about 5 mins, or until cooked through center.
Meanwhile, in skillet heat marinara sauce.
Place cooked chicken in skillet and top each piece with 1 1/2 Tablespoon Marinara. Serve hot.
