Shrimp & zucchini couscous with feta & mint

recipe- couscous salad

1/2 cup olive oil
6 scallions, white & green parts chopped
3 Tbsp Chopped mint

3 Tbsp Basil

6 Tbsp Chopped parsley

3 cloves garlic, minced
1 1/2 tbsp lime juice
2 tsp kosher salt
1 lb. shrimp, peeled and deveined
1 3/4 cup whole-wheat couscous
2 medium zucchini
1/2 cup reduced fat feta cheese
red pepper flakes

Combine olive oil, scallions, mint, parsley, basil, garlic, lime, and salt in a bowl . Chill and marinate shrimp for 1 hour in 1/2 cup of the mixture. Set aside remaining amount.
Prepare couscous according to directions. Cut zucchini into 1/4 inch thick strips and brush with some of the leftover mixture of herb sauce. Cook zucchini on stovetop until tender.
Cook shrimp on stove top for about 5 mins.
Mix shrimp, feta, & remaining sauce with couscous & toss together. Sprinkle w/red pepper.
