edamame quinoa corn peach salad

Edamame Quinoa Salad:
1/2 cup quinoa, rinsed and drained.
1 cup frozen shelled edamame, thawed
1 cup of fresh or frozen whole kernel corn
1/2 cup cherry tomatoes, halved or quartered
1/4 cup chopped fresh cilantro
1/4 cup lime juice
2 Tbsp olive oil

In small saucepan, cook quinoa according to instructions on box.
In large bowl, combine remaining ingredients. Toss to coat. Season with salt/pepper.

Corn and Peach Salad:
4 ears of fresh sweet corn, shucked OR 1 can whole kernel corn
1 cup thinly sliced fresh peaches
8 radishes, thinly sliced
1/4 cup chopped fresh mint leaves
2 Tbsp olive oil
1 Tbsp Apple Cider Vinegar

In bowl, combine all ingredients. Season to taste with salt/pepper. Can make up to 24 hours in advance and refrigerate. Toss before serving.
