Make ahead- Western Omelet “Muffins”

Gluten free & Freezer friendly: Can freeze leftovers & reheat in microwave or oven later.

Olive oil
6 eggs
6 egg whites
1/4 teaspoon kosher salt
Fresh cracked black pepper
4 slices finely chopped ham
2 oz reduced fat swiss cheese (can substitute for cheddar also)
1/2 cup finely chopped red or orange bell pepper
1/4 cup chopped scallions

Preheat oven to 350 degrees. Lightly spray 12-cup muffin tray with oil.
In a med bowl, beat whole eggs & egg whites. Season w/salt and pepper.
Mix in chopped up ham, cheese, bell pepper, & scallions. Pour 1/4 cup of mixture into each muffin cup and cook in oven for 20-24 minutes.
