12 sticks reduced sodium part skim mozzarella string cheese
2 tablespoons all purpose flour
5 tablespoons seasoned whole wheat bread crumbs
5 tablespoons panko bread crumbs
1 tablespoon grated parmesan cheese
1 tablespoon fresh parsley, finely chopped
Olive oil spray
Cut each piece of string cheese into quarters, put on a baking sheet and freeze for 8 hours or overnight.
In a small bowl put flour. In 2nd bowl put the 2 whisked eggs. In the third bowl put your mixture of the bread crumbs, panko, Parmesan, and parsley.
Line a baking sheet with parchment/wax paper. Dip the frozen cheese bits into flour, shake off excess. Then dip into beaten eggs, then into bread mixture (total of 3 dips in 3 different bowls). Put back in freezer for 1 hour.
Preheat oven to 425 degrees. Lightly spray plain baking sheet with olive oil.
Place frozen cheese bites onto baking sheet, then top with a light spray of olive oil.
Bake for 3 minutes, pull out, turn all cheese bites over. Then bake for 3 more minutes. Keep a close eye while baking.
Serve immediately while hot. Enjoy!
To make quick marinara sauce:
1 teaspoons olive oil
2 garlic cloves, minced
1 can (28 oz) crushed tomatoes
3/4 teaspoon kosher salt
fresh ground black pepper
1/8 cup chopped fresh basil
Heat saucepan over med heat. Add oil and garlic stirring for about 30 seconds. Be careful not to burn garlic. Add remaining ingredients (except basil) with a splash of water. Cover and bring to a boil. Add basil and serve.
