3 cheese zucchini stuffed Lasagna rolls
(only 240 calories per serving!!)
-Preheat oven to 350. Ladle 1 cup of marinara in 13X9in baking dish.
-In med nonstick skillet, saute 3 cloves garlic & 1 tsp olive oil over med-high heat for 1 min. Add 2 medium zucchini (grated & squeezed dry) , salt, pepper to taste and cook 4 mins.
– In med bowl, combine zucchini, 1 cup & 2 tbsp part skim ricotta cheese, 1/2 cup grated parmesan, 1 egg, salt and pepper.
– Lay out 8 cooked & dry lasagna noodles. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto baking dish. Repeat w/remaining noodles.
– Ladle the remaining sauce over the lasagna rolls and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake 40 mins or until the inside is heated through & the cheese is melted. Top with fresh basil.
